  • 1 ½ sugar
  • 3 eggs
  • ¼ cup sour cream
  • 1 tsp vanilla
  • 1 tablespoon flour
  • 1 ½ cups Crushed graham crackers
  • 3 tablespoons of melted butter
  • ½ cup of Chocolate ganache

  • 1 Beat cream cheese, 3/4 cup sugar, and salt at medium-low speed until combined
  • 2 Beat in remaining 3/4 cup sugar until combined
  • 3 Scrape beater and bowl well; add lemon juice and vanilla and beat at low speed until combined
  • 4 Add egg yolks and beat at medium-low speed until thoroughly combined
  • 5 Add whole eggs two at a time, beating until thoroughly combined.
  • 6 Brush sides of springform pan with remaining 1/2 tablespoon melted butter
  • 7 Pour filling into crust and set aside for 10 minutes to allow air bubbles to rise to top.
  • 8 Bake cheesecake on lower rack for 45 minutes
  • 9 After 45 minutes, remove cake from oven and use toothpick to pierce any bubbles that have risen to surface. Return to oven and continue to bake until center registers 165 degrees, 2 1/4 to 2 3/4 hours longer. Remove cake from oven and increase oven temperature to 500 degrees
  • 10 When oven is at 500 degrees, bake cheesecake on upper rack until top is evenly browned, 4 to 12 minutes.
  • 11 Once fully cooled and removed from pan, melt chocolate chips via double boiler or microwave and pour over top of the cheesecake
  • 12 Decorate the top with halved Classic Milk Chocolate Stuffed Puff Marshmallows and torch as desired
